To make these delicious cookies all you need to add to this mix is ¾ cup melted butter, ½ tsp vanilla extract, and 1 large egg.

Start by whisking together peanut flour, baking powder, and salt in a small bowl. Beat together butter & sugars in a large bowl with an electric mixer on high speed for 2 to 3 minutes, Lightly beat 1 egg with a fork in a small bowl and add to butter mixture and continue to beat with mixer until creamy. Then add the vanilla extract to the mix and reduce mixer speed to low. Once blended scoop ¼ cup batter for each cookie. Bake on *350 for 13-15 minutes. Transfer cookies to cool.
