Roasted Carrots

Prep time: 10 minutes

Cook time: 35 minutes

Makes: 6 servings

2 lbs Carrots, peeled, trimmed and cut on the diagonal

2 tbsp Benne Oil

1 tbsp local honey

1 tsp sea salt

1 tsp ponzu sauce

Heat oven to 400 degrees. Toss all of the ingredients in a shallow roasting pan until carrots are well coated.  

Roast for 25-35 minutes, stirring several times, until carrots are soft and slightly caramelized.  Finish with a extra drizzle of  benne oil!

Asian Carrot Slaw

Prep time: 10 minutes

Cook time: 1 hour

Makes: 4 servings

4 green onions, finely chopped

3 tbsp benne oil

1 clove garlic, minced

2 tbsp rice vinegar

juice of a whole lime

1 tbsp soy sauce

1 tbsp sugar

2 cups carrots, peeled into long curls using a peeler

 

In a large bowl, combine all ingredients but carrots.  Whisk well and stir in carrots.

Cover and chill until ready to serve.  Serve chilled or room temperature as a side dish or on top of grilled fish.

 

Black Eyed Pea Hummus

 

Georgia Grown Recipe

Prep Time: 15 minutes

Yield: 6

Ingredients: 

  • 1 1/4 cups cooked black eyed peas or 1 can, drained, liquid reserved Zest of 1 lemon Juice of 1/2 lemon

  • 1 tablespoon benne tahini

  • 2 tablespoons Oliver Farms benne oil

  • 1/4 teaspoon cayenne pepper (optional)

  • 2 tablespoons minced onion

  • 1  large clove garlic, minced

  • salt and pepper

Directions: 

Combine all ingredients in a food processor until smooth. If too thick use some of black eyed pea juice to thin out.

Note: You can use any kind of field peas to make hummus. Hummus can be flavored with spices or peppers to vary flavors.
